"Frittata is an egg-based dish similar to an omelet or quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. It may be flavored with herbs" (Wikipedia). For me frittata is a dish my mom used to cook to me twice a week for breakfast before I go to school. She used different ingredients and it always was a little game to me to guess what kind she 's made for me today.
Here is my favorite version of frittata.

Ingredients
1/2 red bell pepper, seeded
1/2 yellow or green bell pepper, seeded
1/8 cup of chopped chives
3 eggs
2 eggs whites
1/4 teaspoon salt
3 tablespoons shredded cheese on your choice
3 tablespoons canola oil
2 tablespoon parsley chopped
pinch of grounded black pepper
Chop chives

Cut red and yellow bell pepper into 1/4 of rings
Grease frying pan and cook pepper about 5 minutes, add chives, cook another 2 minutes.
Meanwhile crack to the big bowl 3 eggs, add 2 eggs whites, salt, pepper and beat up with mixer on high speed.
Reduce heat to medium low and pour egg mix on a top of vegetables, cook about 5 minutes.
Sprinkle with cheese, put a lead on the frying pan and cook another 3-4 minutes.
Serve with chopped parsley.
