Salmon Baked with Vegetables

Don't be afraid to bake fish. It's tasty and much healthier then fry and especially deep fry fish. Lemon juice reduces “fishy taste” and gives a nice hint; you could also sprinkle fish with dill or add a little garlic.

  • 2 lb salmon fillet, skinned
  • 3 tablespoons olive oil
  • 1 yellow or red sweet pepper, cubed
  • 2 medium carrots, shredded
  • 1 medium onion, chopped
  • 1 lemon
  • Salt and Pepper for seasoning
    Cooking Directions

    Preheat oven to 425 degrees. 
    Meanwhile, cut salmon into serving size, sprinkle with salt and pepper and squeeze a 1/8 of lemon on each piece

    Place one salmon fillet in center of a 12" square of aluminum foil. 
    Put onion, carrots and bell pepper on a top and again sprinkle with salt and pepper

    Fold aluminum foil to form a small bowl; seal edges. Poor inside a teaspoon of olive oil

    Place foil package on baking sheet, put into the oven and bake 20 to 25 minutes, or until salmon is opaque and vegetables are tender

    Open foil packet, arrange salmon and vegetables on dinner plate and serve.
