- 2 lb salmon fillet, skinned
- 3 tablespoons olive oil
- 1 yellow or red sweet pepper, cubed
- 2 medium carrots, shredded
- 1 medium onion, chopped
- 1 lemon
- Salt and Pepper for seasoning
Preheat oven to 425 degrees.
Meanwhile, cut salmon into serving size, sprinkle with salt and pepper and squeeze a 1/8 of lemon on each piece
Place one salmon fillet in center of a 12" square of aluminum foil.
Put onion, carrots and bell pepper on a top and again sprinkle with salt and pepper
Open foil packet, arrange salmon and vegetables on dinner plate and serve.
